Turkey Pasta Salad

Turkey Pasta Salad

Ingredients
  • 4 cups cooked fusilli or other pasta 1 L
  • (approx. 6 oz./180 g. raw)
  • 3 cups Smoked Turkey Breast-cubed 750 mL
  • 1 half cucumber, cut in cubes 1 half
  • 2 Tomatoes, chopped 2
  • 1 Red or yellow pepper, thinly 1
  • sliced
  • Dressing:
  • ½ cup Wine vinegar 125 ml
  • ¼ cup vegetable oil 50 ml
  • 1 tbsp brown sugar 15 ml
  • 1 tbsp parmesan cheese 15 ml
  • 1 tsp basil, dried 5 ml
  • 1 tsp garlic salt 5 ml
  • Fresh parsley for garnish
Instructions
  1. In a large bowl, combine all salad ingredients except tomato.
  2. In a small bowl, thoroughly mix dressing ingredients. Add dressing to salad and toss.
  3. Refrigerate 1-2 hours to blend flavours.
  4. Mix in tomato just before serving
