Turkey Stewed in Beer

Turkey Stewed in Beer

Ingredients
  • 454 g (1 lb) boneless, skinless turkey thigh
  • 15 mL (1 tbsp) vegetable oil
  • 1 medium onion, chopped
  • 2 mL (1/2 tsp) ground pepper
  • 2 mL (1/2 tsp) coriander
  • 2 mL (1/2 tsp) thyme
  • 1 bay leaf
  • 1-355 mL (12 oz) can beer (medium-dark ale)
  • 2 medium potatoes, cubed
  • 250 mL (1 cup) carrots, cubed
  • 250 mL (1 cup) celery, chopped
  • 125 mL (1/2 cup) frozen peas
Instructions
  1. Cut turkey into small, bite-sized cubes and set aside. In a medium or large stockpot, heat oil over medium-high and sauté onions.
  2. Add turkey and cook for 3-4 minutes, until browned.
  3. Add seasonings and mix well. Pour beer into pot and heat until boiling, and then add all vegetables, except peas.
  4. Simmer for 1-2 hours or until turkey is very tender.
  5. Add peas and heat thoroughly. Remove bay leaf before serving.
