Turkey Stewed in Beer

Ingredients
  

  • 454 g 1 lb boneless, skinless turkey thigh
  • 15 mL 1 tbsp vegetable oil
  • 1 medium onion chopped
  • 2 mL 1/2 tsp ground pepper
  • 2 mL 1/2 tsp coriander
  • 2 mL 1/2 tsp thyme
  • 1 bay leaf
  • 1-355 mL 12 oz can beer (medium-dark ale)
  • 2 medium potatoes cubed
  • 250 mL 1 cup carrots, cubed
  • 250 mL 1 cup celery, chopped
  • 125 mL 1/2 cup frozen peas

Instructions
 

  • Cut turkey into small, bite-sized cubes and set aside. In a medium or large stockpot, heat oil over medium-high and sauté onions.
  • Add turkey and cook for 3-4 minutes, until browned.
  • Add seasonings and mix well. Pour beer into pot and heat until boiling, and then add all vegetables, except peas.
  • Simmer for 1-2 hours or until turkey is very tender.
  • Add peas and heat thoroughly. Remove bay leaf before serving.
